  1. Prepare Chicken: Pat the chicken thighs dry with paper towels. Season both sides generously with salt and black pepper.
  2. Heat Oil in a Pan: In a large skillet or frying pan, heat the olive oil over medium-high heat until shimmering.
  3. Sear Chicken Thighs: Add the seasoned chicken thighs skin-side down and sear for about 5-7 minutes until golden brown. Flip and sear the other side for another 5-7 minutes. Remove chicken from the pan and set aside.
